SALMON PORT PATTIES”……….
Welcome to the very first of a continuing series of scrumptious recipes from Downunder.Today we will consider a killer of a dish which I am sure you”ll love..
Quite a simple dish which takes little effort or prepping.
First we fillet our salmon into nice long slender pieces.Cut in halves… Place pieces into a large stainless steel bowl.Proceed to add 1 litre of fottified port over the fillets of salmon until covered…. Add 2 tablespoons of oyster sauce,…… Heat up 250 Mls of honey, then pour runny honey in with the mix….. Turn the fillets over and over in the mix about half a dozen times….. Cover contents with glad wrap and alow to marinate in fridge overnight.
Proceed to remove marinated salmon fillets from mix, cut into cubes and grind pieces in a grinder or mincer.
Form contents into patties of desired size. Gently work patties into a prepared pastry mix consisting of egg, flour, and breadcrumbs.
Now you are ready to place patties onto the BBQ hot plate or grill.Continually turn patties over and over until ochre in colour and not too dry.. Patties should be firm yet moist on the inside.
